Are you in the ketchup or mustard or both or neither camp? I grew up with the “eat what’s on your plate” mentality, which has its merits in educating young taste buds for flavor and variety. As a new mom and one intensely interested in flavors, I committed to creating meals with simple variations that would satisfy the child that uses ketchup as a side dish and shuns ranch dressing (my now 19 year old son) as well as the child that shuns ketchup for mustard and still chooses ranch dressing (my now 16 year old daughter). While this might seem to be a silly preference and perhaps they each just need to eat what they are given, preferring ketchup or mustard tells me, a personal chef, that one prefers a tangy sweetness and the other prefers a tangy tartness. The one who likes ranch dressing will most likely enjoy more herbaceous flavor profiles and the one who doesn’t will likely enjoy more a more subdued, classic comfort food profile. So a simple, weeknight meal of hand-rolled meatballs and spaghetti with garlic-basil tomato sauce satisfies each of my three picky eaters every time! Yes, my husband knows his preferences well, too!
