Classic French Palmier Cookie

A classic French cookie - flaky, buttery puffed pastry with a sugary crunch.

Ingredients
- 1 1/2 cups granulated sugar
- 1/8 teaspoon kosher salt
- 2 sheets puff pastry, defrosted
Instructions
- Defrost puff pastry (see Note).
- Prep baking tray with parchment or aluminum foil with baking spray.
- On a lightly floured surface, unfold one sheet of puff pastry gently pressing the seams flat.
- Sprinkle 1/2 c sugar evenly over the sheet of puff pastry followed by half the salt.
- With a rolling pin, lightly press the sugar and salt into the pastry.
- Create the palmier (palm leaf/elephant ear) shape: fold opposing sides inward to meet in the middle and sprinkle with 1/8 c sugar. Repeat once.
- Wrap the log tightly in plastic wrap and chill 30 min in the refrigerator or 15 min in the freezer. The log needs to be cold enough to cut cleanly - not frozen.
- Preheat the oven to 425-degrees F while the log chills. The baking rack should be in the middle of the oven for even baking.
- Slice the cookies: transfer the chilled log back to the work surface. Slice across the log into 12-16 cookies. Place the cookies cut-side up on the prepared baking tray (3-4 across, 5-6 down on a half sheet tray) - leaving a good inch between for room to puff. Sprinkle with remaining 1/8 c sugar.
- Bake 15-20 min until golden. Check the cookies at 10 min. If the sugar on the bottom of the cookies seems to be burning, flip the cookies over, raise the oven rack, and finish baking.
- Cool palmiers on the baking tray for a few min so the cookie can set up and then remove to a cooling rack. Palmiers are best served the same day after cooling completely so they become crisp.
- Storage: will keep for several days in an airtight container but will lose their crispness the longer they sit.
Notes
* How to Defrost Puff Pastry: 30 min on the counter at room temp or overnight (7-8 hours) in the refrigerator. Puff pastry is ready once pliable but cool to touch. If the puff pastry has become too warm on the counter, place back in the refrigerator to chill 15-30 min.
