Mexican Red Rice

Ingredients
- 2 c cooked rice (see Notes)
- 1 tablespoon vegetable oil
- 1 medium yellow onion, diced
- 4 cloves garlic, minced
- 1 tablespoon ground cumin
- Salt & black pepper to taste
- 1/4 cup tomato paste or 6 oz tomato sauce
- 1/2 c frozen green peas, optional
- 1 tablespoon freshly squeezed lime juice
- 1/2 cup chopped cilantro
Instructions
- In a hot skillet, sauté the onion, garlic, cumin in the veg oil until aromatic.
- Add cooked rice and tomato paste or tomato sauce. Mix until the rice is evenly-colored red.
- Sprinkle the frozen peas over the rice mix and continue stirring until mixture is hot throughout.
Notes
Basic Cooked Rice:
1 cup rice
2 cups of chicken broth or water
1 tablespoon butter (optional)
Combine in a microwavable bowl. Cook 15-20 min or until rice is tender.
To lighten this dish - sub cooked cauli-rice for the rice.
