- 2 med spaghetti squash
- olive oil
- salt & pepper
Lasagna Stuffed
- 26 oz crushed tomatoes
- 1 tbsp olive oil
- basil, 3 tbsp fresh or 1 tbs dried
- garlic, 1-2 cloves minced
- 1 lb ground beef
- 15 oz ricotta
- 2 c shredded italian cheese
Chicken Jalapeno Popper Stuffed
- 2 c shredded roast chicken
- 8 oz cream cheese, softened
- 1-2 large jalapenos, seeded and diced
- 2 c shredded cheese - cheddar, monterey jack
- 1 c sour cream
- 4 strips bacon, cooked and crumbled
- green onions, garnish
