What could be better than a buttery, vanilla-y, cinnamon-y end to a “mouthwatering mexican” meal? Pop these Churro Blondies in the oven then start your entrée and side dishes. In about 30 min you will have a complete meal to delight your family even on a weeknight!

Basic pantry ingredients needed –
unsalted butter
brown sugar
eggs
vanilla extract
all-purpose flour
baking powder
salt
fresh orange zest – this one is worth a trip to the grocery store for a fresh orange but optional cinnamon sugar – sugar+cinnamon

As with any brownie recipe, this one quickly assembles! Preheat the oven to 350-degrees F.
Prepare the baking pan. I use a nonstick square pan and coat with baking spray.
Melt the butter. I use a large pyrex for a one bowl prep.
Mix in sugar and then the vanilla and eggs. Sift the dry ingredients (flour, baking powder, salt) over the wet and stir until a thick batter forms.
Optional but recommended: zest 1 orange and stir in to the batter. The fresh citrus aroma will immediately fill your kitchen and lift your taste buds in anticipation of this dessert delight!
Scoop the batter into your prepared baking pan. Smooth the top for even distribution. Lift and drop the drop to expel any air bubbles (a small drop – maybe an inch or two is all that is needed). Sprinkle the cinnamon sugar – while 1/4 c+ which may seem like a lot but, trust me, this gives the dessert it’s crackly topping.
And into the oven while you get a start on your chosen entrée and sides! 20-25 min later, when the edges are dry and starting to pull away from the pan, and when the middle springs back to the touch – pull the pan from the oven and let rest/cool for at least 10 min before dividing into squares.
Serve as is or top with vanilla ice cream and sliced strawberries . . . . and maybe some homemade whipped cream!

- 8 tablespoons (1 stick) unsalted butter, melted
- 1 ½ cups brown sugar
- 2 large eggs, beaten
- 1 tbsp vanilla extract
- 1 ½ cups all-purpose flour
- 2 teaspoons baking powder
- 1 tsp salt
- 2 tablespoons fresh orange zest or 1 tbsp dried, optional
- ¼ cup granulated sugar
- 1 ½ tablespoons ground cinnamon
Instructions
- Preheat oven to 350-degrees F.
- Prepare square pan (9x9 or 8x8) - line with parchment or grease thoroughly with butter to prevent sticking.
- Melt butter. Cool slightly. Stir in sugar.
- Add eggs and vanilla. Whisk vigorously to combine.
- Sift dry ingredients - flour, baking powder, salt.
- Incorporate into wet ingredients to make a thick batter.
- Stir in optional orange zest.
- Pour into prepared baking pan.
- Combine 1/4 c sugar and 1 1/2 tbsp cinnamon and sprinkle over the batter in the pan.
- Bake 20-25 min until edges are set and middle springs back to touch.
- Rest for 20 min before cutting and serving.
