Ingredients
- 1.2 lbs boneless skinless chicken breasts - cut into bite-size pieces
- 1/2 c cup corn starch
- garlic powder, onion powder, black pepper, ginger, soy sauce to taste
- 1 egg
- ¼ cup vegetable oil (enough to lightly film the bottom of the skillet)
- 1 cup orange juice (or two large oranges juiced)
- 2 tablespoon orange zest (or two large oranges zested)
- 1/3 c soy sauce
- 1/3 c honey
- 1/4 c rice vinegar - (may sub white vinegar)
- 2-3 large garlic cloves, minced
- ½ teaspoon ground ginger
- ½ teaspoon crushed red pepper flakes, optional
- green onions, sliced for garnish
- sesame seeds, for garnish
- steamed rice - for serving
Instructions
- Prepare the chicken: cut into bite-size pieces and mix thoroughly with the cornstarch, egg, and any desired seasonings.
- Prepare sauce: whisk together orange juice, orange zest, soy sauce, honey, rice vinegar, garlic, ginger, red pepper flakes (if using).
- Cook chicken - in a large skillet over mid-high heat, shallow-fry the chicken pieces and remove to a 9x13 baking dish. Do not crowd the pan or the oil temperature will drop and the chicken will be soggy and oil-laden instead of crispy.
- Pour sauce over the chicken and bake 15-20 min until chicken is cooked and sauce reduces and bubbles.
- If desired - broil for 2-3 at the end of the cook time for that added crisp.
- Serve garnished with green onions and sesame seeds.
