Ingredients
- 2 large bell peppers or 4 small/med
- 1 lb ground beef or lamb
- 1/2 large onion, chopped
- 2 c cauli-rice
- 15 oz crushed tomatoes
- 2 cloves Garlic, chopped
- Oregano, 3 tbsp fresh or 1 tbsp dry
- Parsley, 3 tbsp fresh or 1 tbsp dry
- 1/2 c Kalamata olives, chopped
- 8 oz Feta Cheese, crumbled
- Cooking oil of choice
- Tzatziki Sauce: nonfat Greek yogurt, lemon, dill, garlic, cucumber, extra virgin olive oil, salt & black pepper to taste
