Borracho Beans

Ingredients
- 2 c cooked or canned pinto beans (see Notes)
- 4 slices bacon
- 1 (14-ounce) canned diced tomatoes with juices
- 3 jalapenos, seeded, stemmed, and chopped
- 2 chipotles in adobo, chopped, optional
- 12 oz beer (borracho means "drunken"), sub chicken or veg broth if desired
- 1 cup chopped cilantro
Instructions
- Render bacon slices and remove from hot skillet. Chop when cool and crisp.
- Add diced onion and jalapeno. Sauté until soft and aromatic.
- Add beans, tomatoes, and beer.
- Simmer 15-20 min.
- Serve hot with fresh cilantro and bacon bits.
Notes
Basic Cooked Beans:
1 pound dry pinto beans
1 tbsp salt
3 cloves garlic, minced 1 bay leaf
1 cup diced onion
1/4 pound salt pork or bacon
1/4 cup jalapeno pickle juice or vinegar
Salt & black pepper to taste
Combine all ingredients in a stockpot and cook 2-3 hours or until beans are tender. Optional: pressure cook on high for at least 30 min.
