Ham & Cheese Palmiers

A savory version of the classic French Palmier cookie!
Ingredients
- 8 slices ham
- 2 puff pastry sheets
- 3 Tbs Dijon mustard
- 1 ½ cups cheddar cheese grated
- 1 egg, beaten with 1 tbsp water
Instructions
- Defrost puff pastry (see Note).
- Prep baking tray with parchment or aluminum foil with baking spray.
- On a lightly floured surface, unfold one sheet of puff pastry gently pressing the seams flat.
- Brush 1 1/2 tbsp dijon mustard evenly over the pastry sheet.
- Layer 4 slices of ham over the pastry sheet followed by 1/2 the shredded cheese.
- Create the palmier (palm leaf/elephant ear) shape: fold opposing sides inward to meet in the middle. Repeat once.
- Wrap the log tightly in plastic wrap and chill 30 min in the refrigerator or 15 min in the freezer. The log needs to be cold enough to cut cleanly - not frozen.
- Preheat the oven to 425-degrees F while the log chills. The baking rack should be in the middle of the oven for even baking.
- Slice the palmiers: transfer the chilled log back to the work surface. Slice across the log into 12-16 pieces. Place the palmiers cut-side up on the prepared baking tray (3-4 across, 5-6 down on a half sheet tray) - leaving a good inch between for room to puff. Brush with egg wash.
- Bake 15-20 min until golden. Check at 10 min. If the bottom of the palmiers seems to be burning, flip the palmiers over, raise the oven rack, and finish baking.
- Cool palmiers on the baking tray for a few min so they an set up and then remove to a cooling rack. Savory Palmiers are best served the same day either warm form the oven or cooled.
- Storage: will keep refrigerated for several days in an airtight container but will lose their crispness the longer they sit. To serve hot - Reheat in a 350-degree oven for 5-7 min.
Notes
* How to Defrost Puff Pastry: 30 min on the counter at room temp or overnight (7-8 hours) in the refrigerator. Puff pastry is ready once pliable but cool to touch. If the puff pastry has become too warm on the counter, place back in the refrigerator to chill 15-30 min.
