Beef Bulgogi

Ingredients
- 1 1/2 pounds boneless rib eye steak or tender steak of choice, thinly sliced
- 1/2 small pear, grated
- 1/4 cup reduced sodium soy sauce
- 2 tablespoons brown sugar
- 2 tablespoons toasted sesame oil
- 3 cloves garlic, minced
- 1 tablespoon freshly grated ginger
- 1 tablespoon gochujang (Korean red pepper paste)
- 2 tablespoons vegetable oil, divided
- 2 green onions, thinly sliced
- 1 teaspoon toasted sesame seeds
Instructions
- Prepare the marinade: add all ingredients, pear through gochujang, to a food processor bowl. Blitz until smooth.
- Prepare the meat: freeze the beef 15-20 min just until firm enough to slice thin against the grain.
- Add beef and marinade to a zip-top bag and marinate overnight or up to 3 hours refrigerated.
- When ready to cook, heat 2 tsp veg oil in a large skillet over med-high heat. Add beef strips and stir/toss as the beef quickly sears and cooks. Remove from pan.
- Add any remaining marinade to the hot pan and reduce. Be sure the sauce bubbles vigorously as this has been mixed with raw meat.
- Pour reduced sauce over beef and serve over steamed white rice.
Notes
For thinly sliced steak - freeze 15-20 min just until firm enough to slice thinly against the grain.
The pear gives this marinade it's signature sweetness. If fresh is unavailable, or if you have canned pears or apples on hand instead, either will make a good substitution.
Gochujang is Korean red chile paste with a fermented soybean base. Substitutions include:
* miso paste + chili powder + paprika
* chile garlic paste/sauce (Sambal oelek, use half the amount called for, may want to add more sweetener as this is spicier than gochujang), sriracha
* red pepper flakes + soy sauce + sweetener
* tomato paste + cayenne + sweetener
