What a blessing after weeks of three-digit temperatures to step outside into a cool, only slightly humid, morning! While some coffee shops have already debuted their seasonal Fall specialties, and many schools here are back in session, I admit, the throw-over sweater and fuzzy socks are starting to call my name, but it is not quite time to trade in the iced tea for a pumpkin spice latte! Comforting, low-simmering dishes redolent with autumn aromas, harvest vegetables, and hearty meats are on the horizon.

Cuban Ropa Vieja with Yellow Rice and Black Beans 

Buffalo Chicken/Chickpea Zucchini Boats with Crunchy Carrot-Celery Slaw & Blue Cheese 

Sunday Roast Chicken with Mashed Potatoes & Homestyle Green Beans (add-on From Scratch Biscuits)

Thai Basil Beef/Chicken with Coconut Rice and Smashed Cucumber Salad
