Soon our evenings will plunge into darkness by 5-6pm and we begin the long march of wintry months to spring. Here in Oklahoma the weather will vascillate for a few more weeks – some days we can enjoy the outdoors even with that sweeping wind and others it is preferable to hide away inside snuggled in our fuzzy socks with a mug of a favorite hot beverage. This next week’s comforting menu is a bit of summer with a chimichurri salmon and a bit of fall with slow-cooked goulash and the Italian classic Pasta e Fagiole – each meal is perfect for portioning into quick weekday lunches, serving family-style between evening activities, or popping into the freezer for more variety on busy weekends.
