As we begin to return to our regularly scheduled programming of busy weeknights, are you prepared to have quick, fresh, satisfying meals ready in minutes of walking in the door? I relished our slower summer pace that allowed the luxury of deciding on dinner in the morning and picking up ingredients later that afternoon (not every day, but many days). I wanted to recoup that freedom as much as possible during the school year and Delightful Dinners was born! These family-friendly, freshly prepared meals are my solution to my own family’s struggle to avoid the pick-up/delivery temptations and I am so happy to share them with you so you, too, can recover your busy, weeknight evenings and enjoy the fleeting time that you have together at one table.
My weekly menus take us around the world with a variety of flavors and ingredients keeping in mind the need to be able to mix & match or easily substitute for preference and/or dietary needs. Note: Low/No Carb substitutions include cauliflower for rice/potatoes, zucchini ribbons or spaghetti squash for noodles, keto “fathead” dough for pizza/biscuits/scones etc.
